Greek salad…
Hmm nothing new there right?
Well, yes there is.
I am sick and tired of seeing the bastardized ‘Greek Salads’ out there. it gets to me.
It gets to me even more that Greek restaurants abroad bastardize the ‘Greek salad’ too. i have seen versions with tuna (HELLO), with potato, and always always with lettuce.
So let me make it clear: Greek salad does not contain lettuce. well at least it doesn’t in Greece.These past few evening it has been too hot to eat (even for me).
And this weather makes me miss home even more – although you may have by now noticed that everything make me miss home!
I love how simple a Greek salad is, how it’s based on pure good ingredients and it tastes like home and summer.
So here you go, a little piece of home…
Greek Salad aka Horiatiki Salata
Ingredients
Now before I list them, can you for the love of god not scrimp on the quality of the ingredients? PLEASE
- Tomatoes – get the best you can possibly get, don’t use crappy cheap ones that are full of chemicals and taste of nothing. if you don’t live in a warm country (poor you) buy organic tomatoes, they taste like tomatoes and not like balls of water!
- Cucumber (organic please)
- Onions (organic please)
- Kalatamata olives
- Oregano
- Feta – the best you can find , I use goat milk feta as I am intolerant to cow’s milk (and all the antibiotics, puss from the cows breasts, chemicals)
- Extra Greek Olive oil – yeah not Spanish or Italian. and get organic if you can, ok?
- Green pepper (although I find green pepper to be bitter so I don’t usually add it to my salad)
- Freshly ground salt & pepper
Ok, now that you have the (high quality organic) ingredients, please read the below instructions and make sure you follow them to a T.
Are you ready?
Step one: CHOP EVERYTHING UP
Step two: toss everything in a salad bowl
Step three: place feta on top
Step four: drown the salad in olive oil
And as I am feeling super generous today, I shall share a Greek secret with you:
rip up some fresh bread (please good quality ok?) and do papara. what is papara? Only the tastiest thing ever! Dunk the bread in the bottom of the salad bowl in the oil and salad pieces.
